Montgomery Pie

Bottom of Pie

1/2 Cup Molasses 

1/2 Cup Sugar

1 Egg

1 Cup Water

2 Tbsp. Flour

1/2 to 1 Lemon (Juice and Zest) I would use a whole lemon next time

Top of Pie

2/3 Cup Sugar

1/4 Cup Butter

1 Egg

1/2 tsp. Baking Soda

1/2 Cup Buttermilk

1 1/4 Cups Flour

1 Unbaked Pie Crust for 9 inch pie

Montgomery Pie

Preheat oven to 375 degrees. Place pie crust in a 9 inch pie plate and set aside. Combine first SIX ingredients (molasses, sugar, 1 egg, water, flour and juice and rind of lemon) in a mixing bowl and pour into unbaked crust. For Top Layer combine sugar and butter. Add 1 egg and beat thoroughly. Add the buttermilk alternately with the baking soda and the flour that have been combined. Spread the topping over the bottom layer in the pie shell. Bake at 375 degrees for 35-40 minutes or until pie feels rather firm when gently shaken.
